Easy Peasy Chicken

This is my Go-to easy dinner.. there's not much thought that goes into this...

The only thing you really have to think about is what veggies you want to put in.

My favorites are asparagus & red potatoes.. you can also do green beans and red potatoes... yellow squash and zucchini... carrots.. whatever you like!

Tonight, I'm making two dishes, so I'll have some for lunches too. In this pan I have potatoes, asparagus, onion and a few green beans (they didnt all fit in the other pan) and seasoning of choice.










These are what I use most!.. they are delicious on chicken!












I like to use boneless, skinless chicken thighs... they are juicy! I don't add any liquid what so ever to this dish. (you can add a table spoon of olive oil if you feel compelled)  I do however cut some of the fat thats left on them.

Add some seasoning to the chicken...
Cover and bake about 45-50 mins.. until the chicken is done, and the veggies are soft.

Orange Chile Salsa

 This is supposed to be a relish for grilled fish... But it's delicious with just chips! 

I think I used 6 or 7 oranges, sliced and diced.




I didn't have all the ingredients it called for, so some was improvised. I added some red and green bell peppers, honey, some pico de gallo, season to taste! 




Pico de Gallo

It's been awhile! 

Let's get back to the kitchen! 


So we've have been trying to eat healthier, which means there's been a lot of fresh fruits and veggies in the fridge.  Which also means a lot of cooking. 

I've recently have mastered making homemade pico de gallo. 

 I never measure anything..... I just add until it looks good. :)


I use: 
  
  • chopped green onion
  • diced purple onion  
  • diced white onion
  • two jalapenos


  • two large tomatoes, I cut out the guts... just use the skin
  • cilantro
salt/pepper/season to taste and enjoy!
(i use fajita seasoning and some garlic salt)

Grilled Chicken Goodness

We had Jeremiah's parents over for lunch today... this is what we had... but silly me forgot to take a pic of the finished products!!! grrr.. I'll take a pic of the left overs...lol

Grilled Corn:
Pull the husks of the corn down, but not off! Make sure to get all of the silk, or most of it, off, rinse






Butter generously! Sprinkle your seasoning of choice.. we like to use fajita seasoning


Wrap 'em back up!


The Chicken:

We marinated the chicken breasts overnight in balsamic vinaigrette.



Asparagus:
 Jeremiah made a foil pouch. Added butter, the fajita seasoning, and some of the juice from the chicken marinade. 
 Wrapped that in some more foil.






Place on a hot grill, and grill away! 


We also made a salad, and some Uncle Ben's broccoli/cheese rice  

It was scrumptious!

Spinach Casserole...

Spinach casserole is a holiday tradition... And lately, I've been making it for every family get together... It's REALLY simple to make!

I always make a double recipe, it seems juicer...
Ingredients:
1 package(10oz) of chopped [frozen] spinach
3 eggs
1 pint cottage cheese
1/4 lb cheese
3 tbsp flour
1/2 stick butter
(this is the single version)

bake 350* 1 hour.






First you need to thaw out the spinach... and add the eggs...


mix and add the cottage cheese... if using the double recipe, I do a pint and a half...
Flour


I just add the shredded cheese to taste... or looks :)


Mix 

and pour into a greased dish


I like to put the butter on top


Bake 1 hour.. or until it starts to get brown on the edges...

Oommmm....

So tonight Jeremiah made Omelets...

Sauteed red & yellow bell peppers and asparagus...
























Cook the chicken...




















Use 5-6 eggs, scramble well.






















Pour half of the egg mixture into hot pan, add cheese.























add veggie mix, chicken (and extra cheese if you like)
























Fold over the sides





















Add your favorite topping [!! :)] .... such as: Sour cream... guacamole... picante sauce... or even taco bell fire sauce.... and enjoy!
