Oommmm....

So tonight Jeremiah made Omelets...

Sauteed red & yellow bell peppers and asparagus...
























Cook the chicken...




















Use 5-6 eggs, scramble well.






















Pour half of the egg mixture into hot pan, add cheese.























add veggie mix, chicken (and extra cheese if you like)
























Fold over the sides





















Add your favorite topping [!! :)] .... such as: Sour cream... guacamole... picante sauce... or even taco bell fire sauce.... and enjoy!

Taco Casadillas


This is pretty easy to do. Not to much prep involved. You brown the beef (or turkey, which I like better) and season it with taco flavoring (follow the directions). Then you get a large tortilla fill half of it with the meat, add cheese and other fillings of your choice and fold it over. I guess you can use a casadilla maker if you have one, but I just used my Foreman.  Butter the outside of the tortilla and grill.




*Note: It was a bit salty, so maybe use low sodium butter?

Bar-B-Q Chicken: The Experiment...

We love Costco...  We get their bag of individually sealed chicken breast. Quite handy!  So a few weeks ago we wanted to cook some chicken... We hadn't fixed the gill, and we had no bbq sauce.  The night before we had McDonald's chicken nuggets. Well they were very generous with condiments, we had about 25 packets of bbq sauce. I said "hey we can use that!" lol


So it began to marinate...

In the mean time I began to prep the asparagus & mushrooms...


Add butter....

 














Saute...





















Since we couldn't use the grill, I used the George Foreman. I should have beat the chicken a little to make them a little thiner... they got a little crisp-a-fied.... BUT, surprisingly, it was quite delicious

 

It's All About The Topping...

I was inspired to create a blog about food/cooking and sharing recipes...also photographing food, which i like to do!


"It's all about the topping" is a phrase coined in my family by my cousin(s) in regard to our grandmothers sweet potato casserole.  It is a Dyson/Bragewitz holiday staple... It's not the holidays without GranGran's sweet potato casserole with brown sugar topping!


Hopefully this will inspire me to cook more often thats not from a box!
